Yes, it is open source where anyone can make their own version of Chromium with custom add-ons, and use their own brand like Brave, Opera, Vivaldi, and Slimjet which are based on Chromium.

I'm surprised more isn't made, if I knew coding I know I would make my own.

There maybe a lot of Chromium based web browsers, but the maker of the web browser does not promote it enough, or their browser got rejected from most of the popular download sites like download.com, sourceforge, github, google play, etc.

I know its hard to make a browser work for everything, I know sometimes videos don't load on waterfox.

Sometimes, adobe flash videos did not load because of Adobe Flash Player problems, and you need to empty your browser's history, cache, and temporary files to make adobe flash work again.

I thought videos didn't use flash anymore? Just html5.

There are still websites which use Flash video. Crunchyroll.com still uses Flash. Not every website have the time or money to hire a worker to convert their flash video to MP4 or another file format, and make their subritle text which works with HTML5.
