Are there many stories of people physically accessing servers to put a virus in it?

I don't see many, just easier to hack into a network than to just walk in.

I feel it is also safer for hackers to use the internet to hack a server than walk in since there could be a security guard or employees which end up beating up an intruder with a weapon.

Still, employees can still infect their machines as well to mess with the company.

I remember reading that there were viruses which can use sound signals and wireless signals to infect a computer, so I feel infected smartphones maybe able to infect computers without the phone owner knowing.

people do use hotspots a lot, infecting one would infect a lot of devices.

I think using a basic wireless 4G or 5G hotspot modem maybe safer than sharing a smartphone 4G or 5G data with a laptop via wi-fi. A smartphone may contain a virus which can infect a PC with Wi-fi or Bluetooth, or USB.
