Unions do help and protect those who are seeking to get a better education to do more IT stuff.

I feel unions can prevent bosses from contacting workers too often when they are not at work, so workers can go to a tech course without being disturbed by a phone call or text message when they are taking a course.

I imagine there may also be fewer workplace injuries if the union request better safety training and equipment like a better movers cart for moving a server or a large desktop computer,

Moving large server equipment and other bulky items is always hard, specially with most IT people not strong enough to lift them.

That is true, a lot of IT workers may not be able to easily lift heavy servers, so workplaces should hire more workers to help with moving servers.
