I saw on the news that some people losing many thousands of dollars over the phone by scammers. I think a lot of time people's money will be gone forever since scammers will most likely withdraw all the money in cash from an ATM.

I think itunes gift card codes are easy to re-sell to people online, and it is harder to prove to Apple that you gave the giftcard to a scammer who held your PC for ransom.
The ransomware maker maybe a huge Apple iTunes games fan who needs a lot of iTunes gift card to buy many games, and DLC which can cause some people to spend thousands of dollars per month on one game. iTunes also sell movies, music, ebooks, apps, and other digital files, so ransomware makers can buy a lot of digital content.

Must be why most stores place a limit as to how many you can actually purchase.

People can always buy gift cards at different times, or many stores with cash.

True, but the measures are in place to protect against those being scam since they wouldn't really go to different stores.

I feel less tech savvy users may go to different stores to buy gift cards if the data on their hard drive is very important to them. The ransomware's creator may tell them to go to different stores to buy many iTunes giftcards.
